Can I uproot my Veggies and take them with me.....?

I am moving next week and my garden is just getting good! have squash, carrots, beets, onions, eggplant and cubers. They all have little veggies starting already and I really really want to try them when they are ready. Can I dig them up and replant them at my new house or do you think they will go into shock?
